Pickled Beets by Marrie
1/4 c water
1/3 c cider vinegar1/4 c sugar
1/2 tsp cinnamon
1/4 tsp ground cloves
Prepare ice bath
Boil 2-3 cups beets in water, I quarter them, cook until you can pierce with fork but are still firm don't over boil. Drain and plunge beets into ice water. Reach in and start snapping off skins --work quickly.
Slice your beets.
Bring all your other ingredients to a boil add your beets, lower temp and simmer on low covered about 3 min. Place in a container that seals firmly and refrigerate. I shake them around to make sure they get recoated. A narrow container works best.
I slice Vidalia onions and toss in as well, those are great to pull out and use in salads.
I usually make a double batch.
These keep in the fridge for quite awhile.

Marries' Orzo Salad
1 1/2 C. Orzo
1/4 C Olive Oil
9 oz artichoke hearts
1 Tbsp Mayo
2 tsp Dijon Mustard
2 Tbsp white wine vinegar
2 Tbsp minced fresh basil
3 oz prosciutto minced
2 oz parmesan cheese (grated)
1/4 C minced fresh parsley
4 scallions minced
salt and pepper
basil for garnish
Cook orzo until 9 min or so
Drain put into a med. bowl toss orzo w/ 1/8c olive oil
in a small saucepan simmer artichokes. Drain and chop
Add to Orzo
In a small bowl, whisk mayo w/vinegar, mustard salt and pepper
Add remaining 1/8C olive oil in a stream whisking to emulsify
Whisk in minced basil and pour dressing over the orzo - mix
Add prosciutto, parmesan, parsley, scallions and salt and pepper to taste
Toss and garnish with basil

a little garlic powder
